Sticky Rice Crackers a.k.a Rengginang and Its Recipes

JAKARTA Rengginang crackers with original flavor are just made of sticky rice added with salt and garlic. However as the time goes, lots of people will make various kind of flavor including the spicy one.

Here is the recipe of making typical Rengginang of Yogyakarta with tangy shrimp paste.

All you need:

- 1/2 kg sticky rice (wash it with water and soak it over night).

- 1 tbs sugar

- 1 tbs salt

- 2 cup of water

- 4 cloves of garlic (crushed)

- 1 tbs toasted shrimp paste

Tiriskan beras, kemudian kukus selama 15 menit atau sampai setengah masak 

Preparation:

1. Drain and steam the sticky rice for 15 minutes.

2. Place the rice in a bowl and mix well with garlic, salt and sugar and the shrimp paste.

3. Put the rice back in the steamer for 15 minutes or until its well done.

4. Shape the rice about 1 inch diameter on a tray. Do not press too hard while shaping to make the rengginang expand as large as possible when you fry them.

5. Sun dry the rengginang, in normal shiny day, it will take 2 days or more to get completely dry.

6. Prepare your pan, and deep fry your Rengginang or sticky rice crackers in medium heat. (*)
