She also added bumbu rujak or sweet and spicy during the grilling process to make the taste extravagant.

Bumbu Rujak is a sweet and spicy sauce made of several local spices and herbs and a little bit of coconut milk to make is savory. It has big red chili which makes the chicken or anything you add into it will has reddish look.  The sauce goes well with almost anything, from protein to fruit.

“It’s perfect for those who love spicy food. I also added some fresh veggies and green bitter leaves with grated coonut as dressing for the companion,” Wahyuni, the owner of Ayam Panggang Nduluran said.

Bumbu rujak dominan dengan rasa pedas manis. Tingkat kepedasan bisa disesuaikan dengan selera. Ayam panggang bumbu rujak ini banyak disukai karena berbalut bumbu (spicy). Berbeda dengan ayam panggang kering yang dominan dengan rasa asin gurih.

Wahyuni also wrap the chicken with banana leaves to add some traditional touch. She has two kind of chicken, those chicken from local farm, and organic chicken. “All depensd on the customers taste,” she added.

For now, Ayam Panggang Bumbu Rujak Nduluran of Madiun could only be ordered online. Wahyuni also give a free delivery service for her customers who lives around the city which order her grilled chicken. Beside bumbu rujak, she also has rica-rica sauce. (*)
