TIMESINDONESIA, SULAWESI – Which person in the earth will want something that burn their tongue and make their tummy rage? Well they just never taste the super spicy Ayam Woku then. This typical food of Manado, North Sulawesi will make you cry in tears but wants some more.

It’s a chicken based food. The super spicy taste combined with a strong scent of basil make the taste more delicate. Those who can stand with spicy food will need a jar of milk to neutralize the burning taste to continue to dig in.

 INGREDIENTS:

1 kg chicken, cut in 12 pieces.

1 cup Basil leaves

5 kaffir lime leaves

1 turmeric leaves (it taste better when you have it)

4 lemon bay leaves

5 tomatoes, diced

2 scallions, chopped

1 teaspoon chicken stock powder

2 teaspoon salt

½ teaspoon granulated sugar

4 tablespoon cooking oil

400 ml water

TO GRIND IN TO PASTE:

6 shallots

4 garlics

3 red Anaheim peppers

11 red cayenne peppers

4 cm turmeric

3 cm ginger

3 candlenuts

INSTRUCTIONS:

1. Boil the chicken for 5 to 10 minutes. Put it in a colander and set it aside.

2. Heat oil in a pot and sauté spice paste, kaffir lime leaves, pandan leaves, and bay leaves until fragrant. About 3-4 minutes.

3. Add chicken, stir for a while and then add the water. Bring to a boil.

4. Add salt and sugar. Braised it for a while so the bumbu (all ingredient get into the chicken). Adjust the taste.

5. Add tomato, scallions, and lemon basil leaves. Stir and cook until lemon basil leaves are wilted. Turn off heat, transfer to a serving bowl. And your super spicy Ayam Woku of Manado is ready to be served. Happy cooking!!!. (*)
