Ayam Taliwang, a Tasty Delicious Dish from West Nusa Tenggara

Ayam in the local language literally means as chicken, meanwhile Taliwang is the name of the place where the dish came from. Basically, Ayam Taliwang is grilled chickens with certain local typical ingredients of Taliwang.

The ingredients consist of red dried chili powder, onions, garlics, tomato, brown sugar, salt and many more. Usually this chicken was served along with warm white rice, plecing kale combined with fried garlic and fried nuts.

To get a perfect taste of Ayam Taliwang, the chicken will be grilled halfway. It’s then removed from the grill and tenderized with a pestle. The chicken then dipped for few second in cooking oil. All those combined became a perfect dish to serve during dinner. Ayam Taliwang has also been known to be a festive food for the local community of West Nusa Tenggara. You could find this dish in almost every party the local has.

This grilled chicken was known since the war between Selaparang Empire and Karangasem Bali Empire. At that time, the Taliwang troops were sent to Lombok Island to assist Selaparang Empire to make a peace with Karangasem Empire. This dish became their daily basis dish during the time.

The fact about this food is that one of the Indonesia revolution heroes named General Ahmad Yani was also eat in her food stall at that time since 1960. At this point, this is where the Ayam Taliwang was known by other Indonesian People.
