How Granny Made Indonesian Spicy Mutton Curry
Ingredients needed:
- Mutton 1 kg (from any part, ribs, tendons and more)
- Lemon grass 1 pcs (smashed)
- Lime leaves 5 pcs
- Cooking oil 7 tbs
- Instant coconut milk 300 ml
- Water 1,5 lt
- Salt
- Chicken block
Grounded ingredients:
- Shallot 8 pcs
- Garlic 4 pcs
- Cayenne chili 4 pcs
- Bird Eye Chili 10 pcs
- Pepper seed 1/2 tsp
- Candle nut 6 pcs
- Cumin 1/2 tsp
- Clove 3 pcs
- Star anise 4 pcs
- Cardamom 4 pcs
- Cinnamon 5 cm
- Turmeric 3 cm
- Ginger 3 cm
Instructions to Cook Mutton Curry According to Granny's Recipe
Using Pressure Cooker
- Rinse the lamb, cut in edible size. Set aside.
- Mix all the ingredients need to be grounded, put it in the blender, and turn it on for a round a minute or when you think it's ready.
- Heat the pressure cooker, add the cooking oil, sautéed the grounded ingredients for around 2 minutes less and more.
- Lower the heat, add the lamb, and all ingredients left including the water, coconut oil, salt, chicken block, lime leaves, and lemon grass.
- Put the lid of the pressure cooker. Turn up the heat and cook for 30 minutes since the whistle on the lid blown.
- With this you will have a nice tender Indonesian mutton curry which melt on your mouth.
Using Regular Cooking Pan
- To cook this dish with regular pan, you will need more than an hour process to do it unless you just want to get a so-so taste. However the taste will be almost similar to those cooked in pressure cooker unless with the texture of the meat.
- First and foremost, heat the pan, bring the cooking oil into a boil, and ad the grounded ingredients.
- Add the lemon grass, lime leaves, salt, and chicken blocks, and then sautéed for about 2 minutes or till the color change and it gives aromatic scent.
- Pour a glass of water into it and add the mutton. Sautéed for 5 minutes more.
- Add the rest of the water and simmer for 1 hour less or more. Adjust the water if it needed.
- Last but not least, add the coconut milk and make sure you adjust the taste or your Indonesian mutton curry or gulai kambing. (*)
