TIMESINDONESIA, KEDIRIOpak Gambir Gulung is a traditional snack or egg roll from Kota Kediri, Indonesia. This food is considered as festive foods which has been around for hundreds of years and is typically served during Idul Fitri. 

It is also known as Egg Roll van Java due to its shape resembles to similar dishes. This food comes in several flavors such as original, durian, ginger, and banana.

The snack is made using a combination of natural ingredients, including fresh fruits, which are carefully chosen to ensure the taste is maintained. The mixture of dough and sugar is not done using a mixer, but rather to let the sugar dissolves naturally in the dough. 

Opak Gambir is Traditionally Made and Cooked over Charcoal

The unique thing about this snack is the way it is made, which has been passed down from generation to generation. Umi Mustadiyah, a 66-year-old snack maker, learned to make this Egg Roll van Java from her elder.

She has been making it since she was in elementary school. Not only Umi, Opak Gambir Gulung is mainly produced in Kedung Sentul, Bujel Village, Mojoroto District, Kota Kediri. There are around 35 makers of Opak Gambir Gulung in the area. 

All of them stil using the traditional way to conserve the tradition and used charcoal to heat the tools. The use of charoal gives the egg roll its own distictive taste from the scent. 

During festival like Ramadan or Eid Al Fitr, the demand for Opak Gambir Gulung increases significantly, and Umi Mustadiyah can make up to 100 kilograms of the snack in a day. She charges the customers between IDR 50,000 to IDR 60,000 per kilogram. 

Opak Gambir is popular not only in Kediri but also in other cities such as Jakarta, Surabaya, Pasuruan, and Trenggalek. This Egg Roll van Java has enabled Umi Mustadiyah to support her family, including sending her children to college.
