Instructions:

Spinach Filling:

  1. Sauté Spinach: Heat olive oil in a pan over medium heat. Sauté chopped spinach until wilted. Add minced garlic and cook for an additional 1-2 minutes.
  2. Prepare Cheese Mixture: In a bowl, combine feta cheese, ricotta cheese, Parmesan cheese, salt, and pepper. Add the sautéed spinach and mix well.
  3. Set Aside: Allow the spinach and cheese mixture to cool while you prepare the puff pastry.

Assembling the Roll:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Roll Out the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet to your desired thickness.
  3. Spread the Filling: Evenly spread the spinach and cheese mixture over the puff pastry, leaving a small border around the edges.
  4. Roll It Up: Carefully roll the puff pastry sheet into a log, starting from one end. Seal the edges by brushing them with a beaten egg.
  5. Chill and Slice: Place the rolled pastry in the refrigerator for about 15-20 minutes to firm up. Once chilled, use a sharp knife to slice the roll into 1-inch pieces.
  6. Bake: Arrange the slices on a baking sheet lined with parchment paper. Brush the tops with the remaining beaten egg for a golden finish. Bake in the preheated oven for 15-20 minutes or until the rolls are puffed up and golden brown.
  7. Serve: Allow the Spinach Rolls to cool for a few minutes before serving. They can be enjoyed warm or at room temperature.
