TIMESINDONESIA, JAKARTASoto or chicken soup has become one popular dishes in Indonesia. This food has gained so much attention from the local community. But little did every know know, soto is not originally an Indonesian dishes.

Taken from Torto.co.id, Ary Budiyanto and Intan Kusima Wardhani on their book entitled “Menyantap Soto Melacak Jao To Merekonstruksi (Ulang) Jejak Hibriditas Budaya Kuliner Cina dan Jawa” (Enjoying and Tracing Jao To as an Hybrid of Java and Chinese Cuisine) said that soto is an acculturation of Indoneisan and Chinese cuisine.

In their book which was published on 2013, in Chinese this food was known as cau do, jao to, atau chau tu which literally means as spiced offal. Yes, they used offal for this dishes.

A book written by Denys Lombard in 1996 entitled Nusa Jawa 2: Silang Budaya Jaringan Asiasaid that this food was firstly introduced by Chinese to Indonesia (Java island) in 18th century.

Back then, Soto recipe was dominated by the Chinese. They build restaurants to introduces the chicken soup to the local community. At first, they cook it using pork offal. But as there are lots of muslim living in Indonesia, they substitute it with ox or buffalo offal. (*)
